Rice is served on a daily basis in Asia. Every single family knows how to cook tasty rice and also a lot of meals with rice as an ingredient. The most popular one is “Fried Rice”. For many Asian people, there is no philosophy behind this meal. Most of the time, they just mix all the meat and vegetables that they didn’t finish the night before with rice then put all of it on the stove. It is the common way in Asia. Since it’s a simple meal, it won’t show up on the table during holidays or gatherings of friends and family.
I realize that many people in the US like fried rice. They only order fried rice in Chinese restaurants. It seems like fired rice has become a formal meal in the US. If you invite family or friends to a Chinese restaurant, a meal without fried rice is not complete. I started to search on-line to see how to cook fried rice as well as a professional chef. When I invite friends to my house for a gathering, fried rice can be my “secret weapon.”

You need oil, cold rice cooked the night before, 1 egg , salt, green onions and some pepper, as well as meat and other vegetables of your choice.
You have to separate the egg yolk from the egg white. Mix egg yolk with cold rice. There is lecithin in the egg yolk. Lecithin can catch extra water from the rice. If there is too much water in the rice, the fried rice will be soft, which means it won’t be tasty.
Put oil, the egg white and green onions together and then fry them until they are medium-soft. After that you just add them to the dish.

You can now start to fry meat and vegetables, any type you like. Before they are well done, add the rice with the egg yolk. Keep stirring and stirring until you can see the rice is separated and then you put the green onions and egg white in. You still stir them around 2 mins.
Don’t forget to add some salt and pepper. It will make the rice taste better.
The entire process is simple and easy. The most important thing is “order”. You must follow the steps. Your fried rice will be like food made by a professional chef. Maybe think about making some fried rice for your family for Thanksgiving. Bon Appetit!!
